INGREDIENTS
250 g butter
250 g caster sugar
150 g egg yolk
150 g our
100 g potato starch
5 g yeast
20 g lemon zest
50 g lemon juice
1 g bourbon vanilla beans
For the decoration:
200 g icing sugar in assorted colors
For the icing sugar:
200 g caster sugar
30 g egg white
2 drops of lemon juice
PREPARATION
Whisk the butter with the caster sugar in a food processor with the large mesh. Add lightly the egg yolks, after you have whipped them, then lemon juice and nally join
hand-sieved powders and avorings stirring carefully.
Fill the molds for three quarters of their height and bake at 180°C for 25 minutes.
Once cooked, allow to cool and then unmould the cakes.
For the icing:
Wisk the caster sugar, the egg whites and 2 drops of lemon with electric mixer at high speed; keep working until the icing becomes glossy.
Put it into dierent small bowls and color it as desired with food colorings.
Put the icing into cones of baking paper and proceed to the decoration of the details in order to emphasize even more the decorations in relief.
